1 Spanish Octopus
2 lemons
Celery
1 onion
Chives
Parsley
3 pods Garlic
Extra Virgin Olive Oil
Black Pepper Corns
Barbecue Sauce
Place Octopus, lemon cut in two, onion, pepper corns, celery in a pot and bring to a boil. Reduce heat until it is barely boiling and cook for 1hr 15mins. (Less time for smaller octopus)
Let cool and cut legs off as far up into the body as you can. Cut up head as well for grilling, leaving only the beak (hard piece) to throw away.
Season with lime juice, garlic, parsley, olive oil and a dash of barbecue sauce. Briefly grill until charred. Serve and enjoy!
